Simple Chiliquiles

I would say that I take after my mother, she was by no means a fan of cooking. And when she was busy and put on the pressure to whip something up, she would find and whip up the easiest and most delicious meals. Among them, chiliquiles!



What you’ll need:
Polo Loco Meat 8 pieces
Las Palmas Enchilada Sauce (1 can)
Cheddar Cheese and/or Monterey Jack Cheese
Corn tortillas
Sour Cream

Making It:
Buy some polo loco chicken-8 piece
Shed the meat from the bones
Get a casserole dish, lay some tortillas on the pan
Then sprinkle shredded chicken onto tortillas
Cut tortillas and spread them onto chicken
Pour Las Palmas Enchilada sauce- cut up in slices or shred cheese onto top
Then Optional- you may make another layer of chicken with tortilla, sauce, and cheese as desired.
Bake in the oven at 350 degrees for 20 minutes
Take out of oven, let stand for 5 minutes.
Serve with Sour Cream on top.
