As a busy college student I don’t have a lot of time to cook and to be honest I’m a terrible cook. Lately I find myself dinning on cheap fast food, peanut butter and jelly sandwiches, and longing for the carefree days of when my mother prepared most of my meals. Knowing that I was homesick for her Mexican food my mother gave me a recipe for soft tacos that was quick and simple enough for any dummy to prepare. Below is the recipe she gave me.
Ingredients:
• 1lb of ground beef
• 1 Packet of McCormick Original Taco Seasoning Mix
• 3 cups lettuce
• 3 tomatoes
• 1 avocado
• 1/2 cup cheddar cheese
• Cilantro (optional)
• Corn tortillas
• Cooking oil
Directions:
1. Chop up the lettuce and add in a few leaves of cilantro. Then chop up the 3 tomatoes and dice the avocado.
2. Mix together all the vegetables in a bowl and this will be the filling for your soft tacos.
3. Grate 1/2 cup cheddar cheese. This will be the topping of your tacos.
4. Brown meat in large skillet on medium-high heat. Drain fat.
5. Add 1 packet of McCormick Original Taco Seasoning Mix and ¾ cups of water.
6. Bring to boil. Reduce heat and simmer 5 minutes, stirring occasionally.
7. Now, you’ll have to fry the soft tortillas. There are numerous different ways that you can soften the tortillas, but one of the best ways to handle it is to heat a pan with just a bit of oil.
8. Place the tortilla in the pan for about 5 seconds and then flip for an additional 5 seconds. Remove and blot with paper towel. Follow for all remaining tortillas.
9. Then, take our beef taco meat and mix with the vegetable filling. Place the filling in the soft tacos and wrap as normal.
You can top it off with cheese or onions if desired. This is possibly the easiest soft taco recipe around and you can experiment and change the meat to chicken if you’re not a beef lover.
