SIMPLE Hot Pot Directions

I am originally from Los Angeles, and I will say that the one thing that I really miss from home is the food. When I moved here to Fullerton, I discovered that there was a lack of authentic Asian food places. Fortunately, my roommate was an excellent cook. I remembered that it was one of our best friend’s birthday, and we hosted a hot pot for him at our apartment. Although preparations do take a little time, there is really no rocket science behind it, and it is nearly impossible to mess up! It is actually a lot easier than it sounds. The simple version is that you have a portable gas stove in the middle with a pot of boiling broth, and you dump whatever food you want to eat into the pot and start eating. In addition, being in college, this is really a breath of fresh air because it is both delicious and healthy at the same time.

It’s really an eclectic range of foods you can put in the hot pot, and there are many styles. For simplicity sake, I do not really have a specific “style”, but here are some of my personal favorites that I like to add:

Shrimp, Thinly sliced beef, Oysters, Clams, Tofu, Udon, Chinese Noodles, Squid, Lettuce, Squid balls, Meat balls, Mushrooms. Imitation crab sticks, Kamaboko(as seen below).















Things You Need:

You will need a portable gas stove, a giant pot, cans of chicken broth, a can of Asian Barbecue sauce (as seen below), and the foods that I listed above, and then some at your own digression.



Directions:
1. Prepare all foods such as opening, washing, and cutting
2. Separate food and place into a bowl
3. Pour Asian BBQ sauce into a small bowl to dip. (One for each person)
4. Set up portable gas stove.
5. Fill the pot with cans of chicken broth till about 3/4’s the way up.
6. Turn on stove and place pot on top of it
7. Wait for broth to heat up, and start placing food into the pot
8. When you feel that food is cooked to your standard, dig in, dip it into the sauce and start eating

Homemade Spring Rolls

Anyone for appetizers?
This treat is very simple and fast to get done

What You'll Need:

Premade Rice Paper
Pre-peeled Shrimp
Lettuce
Carrots
Cucumber
Vermicelli noodles (cooked)
Hoisin Sauce
Peanut Butter
Optional Cooked Pork

Making It:
Boil pre-peeled shrimp until flesh pinkens
Dip Rice paper into water until it softens
Cut vegetables into thin slices

Once all the above is completed: Place vegetables and shrimp (cooked pork optional) into rice paper, wrap.
Mix small bits of chunky peanut butter into hoisin sauce.
Serve hoisin sauce with spring rolls as a dip

Magic Bars

Magic Bars
Here is a simple treat I like to make for my friends during finals week. Its a sweet treat to snack on while studying and it tastes great with a hot cup of coffee. The best part is that it requires only 6 ingredients!

Ingredients
•    1/2 cup butter or margarine, melted
•    1 1/2 cups graham cracker crumbs
•    1 (14 ounce) can sweetened condensed milk
•    2 cups semisweet chocolate morsels
•    1 1/3 cups flaked coconut
•    1 cup chopped nuts           
Directions
1.    Heat oven to 350 degrees F .
2.    Coat 13x9-inch baking pan with no-stick cooking spray.
3.    Combine graham cracker crumbs and butter. Press into bottom of prepared pan. Pour sweetened condensed milk evenly over crumb mixture. Layer evenly with chocolate chips, coconut and nuts. Press down firmly with a fork.
4.    Bake 25 minutes or until lightly browned. Cool. Cut into bars or diamonds. Store covered at room temperature.

Easy Soft Taco Recipe

As a busy college student I don’t have a lot of time to cook and to be honest I’m a terrible cook. Lately I find myself dinning on cheap fast food, peanut butter and jelly sandwiches, and longing for the carefree days of when my mother prepared most of my meals. Knowing that I was homesick for her Mexican food my mother gave me a recipe for soft tacos that was quick and simple enough for any dummy to prepare. Below is the recipe she gave me.




Ingredients:

• 1lb of ground beef
• 1 Packet of McCormick Original Taco Seasoning Mix
• 3 cups lettuce
• 3 tomatoes
• 1 avocado
• 1/2 cup cheddar cheese
• Cilantro (optional)
• Corn tortillas
• Cooking oil

Directions:
1. Chop up the lettuce and add in a few leaves of cilantro. Then chop up the 3 tomatoes and dice the avocado.
2. Mix together all the vegetables in a bowl and this will be the filling for your soft tacos.
3. Grate 1/2 cup cheddar cheese. This will be the topping of your tacos.
4. Brown meat in large skillet on medium-high heat. Drain fat.
5. Add 1 packet of McCormick Original Taco Seasoning Mix and ¾ cups of water.
6. Bring to boil. Reduce heat and simmer 5 minutes, stirring occasionally.
7. Now, you’ll have to fry the soft tortillas. There are numerous different ways that you can soften the tortillas, but one of the best ways to handle it is to heat a pan with just a bit of oil.
8. Place the tortilla in the pan for about 5 seconds and then flip for an additional 5 seconds. Remove and blot with paper towel. Follow for all remaining tortillas.
9. Then, take our beef taco meat and mix with the vegetable filling. Place the filling in the soft tacos and wrap as normal.
You can top it off with cheese or onions if desired. This is possibly the easiest soft taco recipe around and you can experiment and change the meat to chicken if you’re not a beef lover.

Simple Chiliquiles

I would say that I take after my mother, she was by no means a fan of cooking. And when she was busy and put on the pressure to whip something up, she would find and whip up the easiest and most delicious meals. Among them, chiliquiles!



What you’ll need:
Polo Loco Meat 8 pieces
Las Palmas Enchilada Sauce (1 can)
Cheddar Cheese and/or Monterey Jack Cheese
Corn tortillas
Sour Cream

Making It:
Buy some polo loco chicken-8 piece
Shed the meat from the bones
Get a casserole dish, lay some tortillas on the pan
Then sprinkle shredded chicken onto tortillas
Cut tortillas and spread them onto chicken
Pour Las Palmas Enchilada sauce- cut up in slices or shred cheese onto top
Then Optional- you may make another layer of chicken with tortilla, sauce, and cheese as desired.
Bake in the oven at 350 degrees for 20 minutes
Take out of oven, let stand for 5 minutes.
Serve with Sour Cream on top.

SIMPLE HEALTHY Homemade Jello Dessert Recipe

Growing up as a kid I never really enjoyed my mother’s cooking. I also remember as a kid I had a really big sweet tooth. One day I asked my mother to buy me sweets and she refused, but she created a simple jello recipe that was both sweet but also healthy. It was almond jello with jackfruit. See healthy with natural fruits. If you are in Fullerton like I am, there is a 99 Ranch Market off Euclid.

Buy there: A packet of Agar Dessert Powder and a can of jackfruit



The directions for this recipe are very simple.
1. All you need is the Agar Dessert Powder, the can of jackfruit, and a cup or two of water.
2. Pour the water in a bowl and mix the powder.
3. When done mixing, open the can of jackfruit. If preferred you can make the pieces smaller. When finished put the jackfruit into the mix
4. Refrigerate for about 45 minutes or until solid.
5. Enjoy
